BOSS HOGS

Owner and operator of Boss Hogs, Tom, has been personally cooking Southern style BBQ for 25 years. BBQ is even in his lineage going back to Greece when his Great Grandfather had a “souvla” business. Souvla is the process of pig roast or lamb roast on a spit. Here in Canada he had the benefit of learning southern BBQ from various North American pit masters. Taking this experience and adding the techniques passed down to me has yielded quite the results.

We asked Tom what his best tip or trick would be to those wanting to enhance their BBQ skills at home, and this is what he had to say;

“A lot of what you see on you tube and internet is BS, a good back yard bbq like a Broil King pellet grill or a Traeger is important. Trim, rub, rest, have your smoker smoking before you put your meat on. With Ribs membrane off or on is a matter of opinion. You are looking for tendor rack that you can handle. You don’t want the rack to fall apart when you touch it. I like to fold the thicker side of the rack up, I want a little resistance but with enough pressure it should break. Fall off the bone is a fallacy, think more like bite off the bone. Lastly, play with your flavours and temperatures, like anything else only experience yields results!!”

Smoke Dem Bones soon discovered the thrill of competing in BBQ competition as well as the hospitality and camaraderie that the competitive BBQ teams on the circuit shared with us. Cooking in competition is not an easy task and it definitely makes you work hard to develop your skills beyond traditional cooking. To be able to win awards amongst the best of the best is truly a satisfying experience. It takes a certain type of individual that is willing to stay up all night long tending to a fire so that they can create the most amazing barbecue and then go through the rigors of timing and preparation to win a ribbon with it. Most people are not willing to do that but we are!

Armed with her voice, guitar and a looper, this one-woman show is ready to entertain! Jada’s signature powerhouse voice is the cherry on top to her fun takes on classic song-alongs. She simultaneously pulls on the heartstrings of listeners with soulful vocals while sparking nostalgia with a commendable set list. The songs range from chill acoustic jams to huge anthems worthy of a stadium. Whiskey Blind are a very popular band hailing from Langley, bringing real country with a southern rock edge. Playing original songs that will have your feet stomping and your hips rocking in no time, Whiskey Blind will be sure to fire up the crowd in the evenings at Ribfest. The Limit

Duane Watson Band

The Duane Watson Band play incredible, original country and rock music that will close out the Saturday night perfectly!
